This last year I was on the hunt for a good, moist, chocolaty, brownie recipe.  I tried many different recipes and finally found this Fudge Brownie Recipe.  I have made it for many of our friends as a dessert and served it with our home made ice cream, which my husband makes and is absolutely fabulous!  Each time I have served the brownies I have had rave reviews.  If you want a nice chocolate dessert or are craving something chocolaty, these brownies will not disappoint. They are fudge-like versus cake-like.  My husband and I love these Fudge Brownies.

Since I baked these brownies I have not wanted to use a box mix again.  I always enjoy knowing what ingredients are in my food and baking from scratch allows me to do this.  This recipe is simple and it is relatively quick to whip up a pan of brownies. This recipe calls for vanilla extract and I bought, for the first time, Organic Vanilla Extract.  I found the best price for Organic Vanilla Extract at Vitacost online.

I also used my own eggs from my chickens, Real Butter, Organic White Wheat Flour, Organic Cane Sugar, and Semi Sweet Chocolate Chips.  My next step is to purchase organic semi sweet chocolate chips.  Baking with organic ingredients warms my heart in that if I am going to go through the effort to bake something to serve, I want it to be as healthy as possible, while tasting great.

The recipe calls for powdered sugar to be sprinkled on top of the brownies when they are done.  It has been my experience that you want to do this right after pulling the brownies out of the oven, otherwise the powdered sugar does not stick to the brownies.  A little kitchen tool that I totally love using to sprinkle the powdered sugar is a mini hand held sifter.  The powdered sugar spreads onto the brownies nice, fine and even.

My vintage hand mixer is perfect for the mixing in this recipe.  Sometimes it is the little simple kitchen tools that makes a recipe come together easily or assist in the finishing touches.

A Little Extra Tidbit: I have baked these brownies for my Farmers’ Market and I transported  them in my Snapware 2-Layer Cupcake and Cookie Carrier that I found on Amazon. I totally love it.

I bake my brownies the night before my market and once they are cool I put them in my Snapware Carrier on the cake side of the tray and they stay fresh until I am ready to sell then at my market the next day.

Last weekend at my Farmers’ Market in Sandpoint, Idaho, I sold out of my Lemon Blueberry Pound Cake.  I was so excited.  It has taken a little bit for people to know that I am selling some “Homestead” fresh baked goods along with my candles.

I even had people ask if I had more or if I was out before I could write on my chalk board that I sold out.  I think that I am going to make a sold out sign to put on the board whenever this happens.  How cute will that be!

Next week I am going to bring some more Lemon Blueberry Pound Cake along with my Fudge Brownies.  I will blog about these in a future post.

I came across this recipe and love it.  I love lemon tasting food and this recipe delivers.  It not only has lemon juice in the cake and glaze, but it also has lemon zest in the cake to give it that extra lemon zing.  I used fresh organic lemons for my juice and zest.  Nothing but the best I say!  I have been taking this cake to my Farmers’ Market and have been getting a very positive response.  I am excited and it is always fun to serve good food.

When making this recipe I used my farm fresh eggs, along with organic non-GMO white wheat flour,  organic cane sugar, non-GMO baking powder, organic lemons and zest, kosher salt, raw milk from an Idaho small dairy that is licensed to sell raw milk, and blueberries I picked and froze myself.  Mmmmmm!

When I first made the Lemon Blueberry Pound Cake, I used an actual hand grater that has the big and small holes and grated the lemon peel with the small holes to make my lemon zest.   This did not make a fine lemon zest.  I went online and found a review about a “Zester”.  I thought to myself that this tool would be perfect to make nice finely grated zest.  I bought it and it works great! The “Zester” is called The Original Microplane Classic Series Zester.  It is made in the USA, which is a bonus in my book.  I bought it off of Amazon.  This is an amazing little tool that no kitchen should be without.  I look forward to using it when making my Lemon Blueberry Pound Cake.

A few years ago at a yard sell, I found a vintage J.K. 30 Juice King.  My husband and I use our hand juicer often.  I used this juicer to extract the juice from my lemons and it worked awesome.  I love the old hand tools.  Any juicer will work just as fine as our Juice King.

Baking Tip:  When baking this Lemon Blueberry Pound Cake, I start checking the cake about 5-10 minutes before the allotted time.  I like to pull the cake out of the oven just as soon and my toothpick inserted in the middle is clean or a tad on the doughy side.  This makes for a nice moist cake.

Freezing the Cake:  I have frozen the pound cake as well and it tasted as wonderful as eating it the some day I baked it. To freeze the cake, I wrapped the cake in parchment paper and then put it in a zip loc bag.  When I wanted to serve the cake, I pulled it out of the freezer the night before and let it defrost on its own.  The only thing I noticed was that the glaze is moist and not as hard as it was before freezing it.  This I minor to me and I would freeze my cake again in the future.

Raspberry Cream Muffins at the Farmers’ Market at Sandpoint

Pauper’s Candles is debuting its Farm Baked Goods.  Raspberry Cream Muffins are on the menu.  I found this recipe and love it.  We have raspberry bushes on our property and are able to use our own berries in these muffins and our “ladies” chickens supply our eggs.  I also use organic cane sugar, organic white wheat flour, non-GMO baking powder, real butter, and kosher salt.  My thoughts are if I am going to make some baked goods, why not use the best ingredients as I can.  I love making good healthy yummy tasting food.
